Hibachi grills are called shichirin in Japanese and are small, portable barbecue grills that are made from cast iron. These grills have an open-grate design and commonly use charcoal as their heating source. Modern hibachis in U.S. restaurants are electric so that they can be used to cook food indoors.
The good news is that hibachi chicken would generally be a great Healthy Dining choice, especially when paired with some veggies and whole grains for sides.

Modern variations are typically big enough to build a two-level fire, meaning you can make one side hotter than the other. Being that your food remains close to the flame, hibachi grills are best used for cooking things like seafood kebab or small strips of meat.
Good foods for grilling on a hibachi include yakitori, sates, kebabs, chicken breasts or thin fish fillets or steaks, sliced vegetables, tofu, hamburgers, hot dogs, pork chops and beef steaks (less than 3/4 inch thick), fruit, and bread (but watch carefully).

Hibachi dining is when you sit at a large table that surrounds a hot flat-top grill . Guests are seated around three sides of the table, and the chef stands on the grill side, cooking your meal in front of you (and sometimes throwing random food into your waiting mouth).
The main difference is the type of sauce used. Hibachi chicken is cooked in soy sauce, while teriyaki chicken is cooked with a sweet glaze made from soy sauce and other ingredients.
Once it’s time for your main meal on the hibachi , a few simple strategies to keep the meal on the healthier side: Choose steamed white or brown rice over fried rice with egg yolks. Or order whole-grain noodles instead, if available. Opt for lean proteins like chicken or fish over beef, or stick to all veggies.
Start the meal off with some steamed edamame, steamed dumplings or miso soup. Edamame and miso are both made from protein-rich soy and steaming the dumplings keeps the calories low (but flavorful). Fresh fish in sushi rolls or sashimi (thin slices of raw fish) are also packed with protein and healthy fats.
